Studied French cuisine in St. Entienne, France with a local restauranteur.
Brian has worked for a number of Des Moines Area restaurants over the last two decades. On the list include Mondos, Des Moines Golf and Country Club, Fratello's on 8th and Flemmings Steak House. Chef Brian also operates as a personal chef to those lucky enough to know him.
Brian's believes in focusing on seasonal, local foods grown in sustainable ways. This method highlights foods at their peak in flavor and nutritional value while ensuring that less harm is done to the environment.
