Brian is a 2013 graduate of the Iowa Culinary Institute (ICI), where he was honored with the Marge Anderson Scholarship Award for his outstanding dedication to the craft. As part of his training, he completed an intensive study in classic French cuisine in Saint-Étienne, France, working under the mentorship of a local restaurateur and deepening his appreciation for traditional techniques and seasonal, ingredient-driven cooking.
